IRRESISTIBLE CHOCOLATE COOKIES

My good friend Shirley De Vault gave me this

excellent recipe to put in a cookbook I wrote in 2001,

“Grannie Annie’s Cookin’ at the Homestead.”

She stated that her boys always took these to their

high school bake sale.

Preheat oven to 350°

1 cup raisins, soaked in 1/3 cup dark rum for one hour

1 cup butter at rm. temp.

1 cup white sugar

1 cup brown sugar

2 eggs

1 1/2 tsp vanilla

2 cups flour

2 1/2 cups quick oats

1 tsp each salt and baking soda

1 cup semi-sweet chocolate chips

1 cup chopped nuts

Soak raisins in rum for one hour. In a large bowl, cream butter and sugars until fluffy.

Beat in eggs and vanilla until smooth. Stir in flour, oatmeal, salt and baking soda.

When well mixed, stir in chocolate chips,nuts and raisins. Stir from the bottom of the bowl

until combined. Drop by teaspoon onto a well buttered cookie sheet.

Bake 8 to 10 minutes until golden. Cool on racks.

Will keep 1 to 2 weeks. Makes 6 dozen cookies.

CREAMY BROCCOLI-CARROT SOUP

Bob loves this! Grandkids, Arleigh and Grey call broccoli

“Gock” so in our house this is called “Gock Soup.”

Sautee’ in large saucepan with olive oil and butter,

1 medium chopped onion

2 medium sliced thinly carrots

2 ribs of celery chopped

3 cups of fresh broccoli florets, bite size

Cook and stir until crispy tender

Add:

11/2 cups milk reduced fat.

1 can canned milk

1/2 teas minced garlic

1/2 teas thyme – (op)

3/4 teas garlic salt

A pinch of cayenne pepper

A pinch of black pepper

3 tblsp flour mixed with 1/4 cup milk

Add the flour and milk, bring to boil, stirring constantly.

Reduce heat and cook 2 minutes, stir until thick.

Add a tablespoon of butter. Stir in. Serve in large bowls

with a sprinkle of cracker pepper and a slice of sour dough bread.

NOTE: Add cooked chopped bacon, diced ham if you like.

BEEF-BLACK BEAN TOSTADAS

Love to make this. Fast and simple!

Cook in skillet:

1 lb of lean hamburger until not longer pink.

Drain. Put back in skillet.

Add:

1 can of diced tomatoes with green chilies

Simmer until liquid is reduced, about 6 to 8 minutes, uncovered

Add drained:

1 can 15oz black beans – pinto beans work well too

Heat through:

Spread on 8 warm tostado corn shells:

1 can 16oz refried beans, reduced fat Top with the beef

mixture.

Top with your favorite topping. Onions, sour cream.

Salsa, Guacamole and shredded lettuce and cheese.
