RECIPES

Sorry! I do not have a recipe for the Cabbage Bellies, or Patches or Kraut Burok, as it is a “science” to how much bread dough to make, how much hamburger and cabbage. Sandy will tell you off the top of her head! No written recipe that I can find at this time.

SUSIE’S POTATO-CABBAGE and SAUSAGE SUPER

Wash and slice (no need to peel)

2 large potatoes-Irish or Yukon gold

Fry in skillet with small amount of half butter-olive oil, until brown

Slice turkey sausage or turkey Kielbasa.

Fry until brown with potatoes

Add salt and pepper to taste

Add 1/2 head chopped cabbage

Fry slightly. Add 2 tbsp water.

Put lid on and let simmer and steam until

the cabbage is done to your liking.

Serve in a big bowl and pass the catsup!

POTATO DUMPLINGS

I looked a long time for this recipe! Good with gravy.

Sandy McClure calls this Kaduval and Glaze.

Boil:

Three pound of unpeeled potatoes and simmer until tender

Drain and chill overnight.

When ready to serve, bring a large kettle of water to boil

Peel cooked potatoes and grate into bowl:

Add:

3/4 cups flour

2 eggs

1/2 cup fine bread crumbs

1 tsp salt

1/4 tsp nutmeg

Pinch of pepper

Combine and mix with hand until well mixed. Shape into small one-inch balls and roll in flour.

Add the dumplings to the boiling water a little at a time so the water will keep boiling.

Simmer uncovered until the dumplings rise to the top, then let them boil 2 minutes longer.

Remove with slotted spoon to a warm serving bowl. Sprinkle with parsley.

So good with chicken or roast beef or pot roast gravy. Also good with “gingersnap” gravy.

CORNED BEEF CASSEROLE

My friend Pauline Dukowitz submitted this to the HEA magazine.

She always reminds me to “Follow the recipe, Ann!”

8 oz pkg egg noodles

1 can corned beef

1 can cream of mushroom soup

1 can cream of chicken soup

3/4 cup milk

3/4 cup grated Cheddar cheese

1 small onion chopped

Cook noodles and drain. Mix all ingredients together.

Bake in buttered dish at 350% for 45 minutes.

SIMPLE POTATO SALAD

4 cooked potatoes diced

4 eggs diced

2/3 cup celery diced

1 medium onion diced

1 to 2 tblsp sweet relish

3/4 cup mayonnaise

2 tblsp mustard

Stir all together while potatoes and eggs are still warm.

Add salt and pepper to taste.

Cover and chill.

Additions if you like:

Small can of sliced olives. 1 Tblsp horseradish. 1 tblsp vinegar with 1 tblsp sugar.

1 small can diced pimentos to add dolor – drained. These are all options.
