Ham and Cheese Mini Drop Biscuits




 

2 cups self-rising flour

1/4 cup vegetable shortening

1 cup finely chopped cooked ham

2 cups finely shredded sharp cheddar or swiss cheese

3/4 cup, plus 2 tablespoons milk

Preheat oven to 425 degrees. Line a large cookie sheet with parchment paper or spray with nonstick cooking spray.

Place flour in a large mixing bowl. Cut in shortening with a pastry blender (or two folks) until coarse crumbs form.

Stir in ham and cheese. Add milk and stir with folk until dough forms. Drop by small teaspoonfull onto baking sheet. Bake about 12-15 minutes, or until light golden brown. Serve hot.

Makes about 40 biscuits depending on size of drop.

Kitchen Ade Note: For adults wanting a spicier biscuit, add 1/4 teaspoon cayenne pepper.
